Shrimp in Green Aguachile

¾ kg medium size shrimp, peeled, cleaned, headless, split open
4 serrano chiles, stemmed, seeded, split open
½ cup water
1 cup lime juice
1 tablespoon chia seeds
¼ clove garlic, peeled
2 tablespoons mint, roughly chopped
1 red onion, diced
1 dragon fruit (pitahaya), peeled and diced
2 limes, thinly sliced, seeded
Salt and pepper
Corn tostadas
Puree the chiles with ¼ cup of water. Set aside.
Place the rest of the water and the chia seeds in a deep bowl. Let rest until the seeds plump up a bit.
Add the lime juice, chile puree, salt and pepper.
Arrange the shrimp in a serving dish, slather the chile mixture over it and top with the mint.
Garnish with onion, pitahaya and slices of lime. Serve with corn tostadas.
