Kings Day Bread-cake

450 g flour
15 g dry yeast
200 g butter
100 g sugar
3 eggs
7 egg yolks
2 pinches of salt
2 tablespoons orange-flower water
Lime zest
200 g citron
Fig or candied fruit for decoration
2 Baby Jesus figures
Egg yolk for glaze
Dissolve the yeast in 8 tablespoons of warm water, add a little flour to make a soft dough. Let it rest for 15 minutes in a warm place until it doubles in volume.
Make a mound of the rest of the flour, create a hollow in the center, and place in it the whole eggs, sugar, and salt. Mix and add the egg yolks, orange-flower water, lime zest, butter, and the fermented yeast mixture.
Knead so all the ingredients are blended. When the dough lifts easily from your hands and the surface, form a ball, cover it with a towel, and let it rest.
When it has doubled in volume, knead the dough again and form it into an oval-shaped wreath. Set it on a greased cookie pan and insert the Baby Jesus figures in different places. Let it rest for an hour. Decorate it with citron, fig, and candied fruit.
Glaze with egg yolk and sprinkle with sugar. Bake 15 to 20 minutes at 180°C (355°F).
It can be served with hot chocolate, champurrado, or atole (optional).
