Guava Paste

1 kg guavas (ripe but firm)
Juice of 3 or 4 limes
3 cups sugar
2 apples
Wash the guavas and put them in boiling water. Leave them 5 minutes or until the peel starts to split.
For the syrup
Boil the peel and cores of the apples in 2 cups of water.
Dissolve 3 tablespoons of sugar in a ½ cup of water in a pan. When it takes on the consistency of syrup, add ½ cup of the apple peel and core infusion.
For the fruit paste
Puree the guavas in the blender, strain, and put the pulp in a pan on the stove.
Add the syrup and stir until it starts to boil; add the rest of the sugar and stir continuously for 5 minutes.
Add the lime juice and leave over the flame for 5 more minutes.
The mixture will be ready when the sides of the pan become visible while stirring it; at that moment remove it from the stove.
Pour the mixture in a mold lined with wax paper and let it sit for 24 hours.
Guardar en recipientes bien tapados y refrigerar. (La duración aproximada es de 2 meses)
Store in air-tight containers in the refrigerator. (It will keep for about 2 months)
Serve in slices with cheese, if desired.
