CHILES STUFFED WITH CABRITO EN CONFIT

Ingredients: 
Cabrito
¼ small goat, in large pieces
Salt
8 cups lard
Chiles
300 grams sugar
¼ cup instant coffee
4 cups water
1 cup cider vinegar
12 chiles güeros or caribeños
3 tablespoons soy sauce
3 tablespoons Worcestershire sauce
3 tablespoons water
1½ tablespoons oil
To serve
Caramelized onions
Preparation: 
Cabrito
Rub salt on the goat and refrigerate for 24 hours.
Heat the lard to 90°C. Add the goat and cook for 5 hours at a constant temperature.
Drain, bone, and chop the meat.
Chiles
Place sugar, coffee, water, and vinegar in a saucepan. Heat almost to a boil, add the chiles and cook for a few minutes, making sure that they remain firm.
Drain the chiles, slit open, and carefully remove the veins. Mix soy sauce, Worcestershire sauce, and water.
Heat a griddle with oil and sauté the chiles, basting them with the soy sauce mixture until they are well browned.
To serve
Stuff the chiles with the cabrito.
Serve with the caramelized onions.
