Ingredients:
3 morita chiles, soaked, split, stemmed and seeded
1 kilo corn masa for tortillas
2 tablespoons lard
2 cucharadas de manteca de cerdo
Salt
Plastic wrap
Preparation:
Mix the chiles and cheese into a paste.
Combine the masa, lard, salt, and a little water.
Knead until soft and easy to manage.
Cover with plastic wrap and allow to rest at room temperature for 15 minutes.
Form small, equal-size balls of the masa.
Make an opening in the center of each ball and put a small amount of the chile and cheese mixture in it.
Close the opening, roll it into a ball again and flatten between your hands or with a tortilla press. They should be thick.
Heat a comal (griddle) or frying pan over a medium flame and cook the bocoles.
Serve hot on a flat plate with beans cooked in their broth.
