Eduardo Plascencia is a researcher in gastronomy, founder of the Center for Gastronomic Innovation in Monterrey, Master Chief of Mexico (2014), and guest professor at the Basque Culinary Center in Spain.
Plascencia has a curriculum that cannot be easily condensed. He is a promoter of Gastronomic Research as a new academic discipline, he develops workshops for Gastronomic Research, and he fosters the Modular Teaching of Mexican Cooking, among many projects.
He earned a licentiate degree with honors in Gastronomy from the Universidad del Claustro de Sor Juana; he graduated from the Ferran Adrià School of Food Culture and Sciences at the Universidad Camilo José Cela in Madrid, Spain.
His wildest dream is to discover the technique that makes Mexican cuisine one of the most diverse in the world. He defines himself as “Mexican by birth and conviction, gourmet by training, chef at heart, and researcher by calling.”
